Many of you already know, either from word-of-mouth testimonies or first-hand experience, that I am not the world's best housekeeper. On a good day, there's only about 10 hours worth of clutter to pick up. What you may not know, however, is that I'm actually not too bad in the kitchen. (By that I mean cooking, of course, not cleaning.) I'm certainly not going to win any awards, but my family generally eats my meals without complaint. Because of this, I'm willing to take a few chances with foods I've already mastered. One such food is pancakes.
Lately, Kathryn has been on a "Berries!!" kick, so I've been buying raspberries and blackberries as often as I can afford them. This morning I realized I was down to one package of blackberries and they weren't looking too great. So, we decided to put them in pancakes. At first, this idea made perfect sense. Delicious fruit mixed into pancakes. What could go wrong? Well, I'll tell you. Blackberries, as it turns out, are much thicker than pancakes. Therefore, when you try to flip the pancakes, the other side doesn't reach the pan.
For the second batch, I smashed the blackberries already on the pan. By the third, I had figured out that it made the most sense to smash them in the bowl with the remaining batter. That not only made them prettier, but also allowed for even cooking on both sides.
In the end it was a huge success. Kathryn ate four of them--without syrup. I can't tell you how much easier that makes mealtime.

i made lasagna last night and it was a big hit! i was trying to make up for the night before when we had chicken and rice over mushroom soup. my rice had dried out by the time we got to it and christian's chicken was pink, and when i mentioned it he freaked out and wouldn't eat the rest of it!
so now we have a whole casserole of lasagna for the 2 of us which we will probably never finish!
well you can bring it over to our place as we are always in need of good food that we don't cook.
lettuce see..i am a fabu cook, as i like to think, and many others have said. i "created" a citrus chicken meal, made beef brachiole, and just mastered grilling steak, bake my own bread, bake wonderous cakes, create coffee masterpieces...
...but i have NEVER EVER been able to master the pancake. they are either to burnt, too light, uncooked in the middle, etc etc etc. i stick with toaster waffles.
i have people to cook for me.
actually, i'm a damn good cook, i just don't really enjoy it. i like to bake cakes and make lavish ethnic meals, but i enjoy complaining about the cooking process far more.
the truth is, is that i didn't learn how to cook until recently, and i'm still quite proud of it. HOWEVER, by looking at my family and my lacto-ovo vegetarian pregnancy babies, my family's certainly not starving.
my worst mistake in the kitchen? adam and i have had more than one rice explosions due to miscalculations. oh, and there also was an incident with corn starch...
Can I cook? Absolutely! My ardor has cooled somewhat after almost 35 years of marriage though. Hmmm, I think I'll go make some popcorn for dinner.
Evan & I could eat an entire pan of lasagna in oen night. We'd have to cut a section for Kathryn, of course, but the rest would be gone before it had a chance to becomes leftovers.
I knew Rachelle was a "fabu cook" when I saw she had a cookbook holder on her wedding registry. And I have since experienced a little of her talent. Although I have no idea what beef brachiole is.
I actually enjoy cooking. And eating. It's the cleaning up afterward part that makes me want to order take-out instead of preparing my own meal most nights.
well if your cooking is like the stuffed green pepper we had i will definitely come for dinner more often. yum!
and having kathryn scream hello to me is just an added bonus...
